Koueigiku Shuzo was established in 2019. Two friends who worked outside the sake industry set up the brewery and partnered with a Master Brewer, also known as a Toji, Katsuaki Yamamoto. Yamamoto-san is one of Japan's most talented sake brewers and was behind the trendy 'Kikutaka' sake brand.
